How do I force a Ditch when my cut is not as far as my road

How do I force a Ditch when my cut is not as far as my road template needs? We are having issues with the template not ditching when the disturbance only goes out 6' but our ditch is 8' wide. It seems to automatically cut to daylight if there is not enough room for the template ditch.
Using 2007 Carlson and AutoCAD

Perhaps use of the Template Point Profile and/or Template Point Centerline to force the ditch to a desired elevation/offset from centerline?
